It's Wellness Wednesday! With summer approaching, it's time to start thinking about fresh summer salads. At my house, we make a salad with every meal, but I often forget that there's more to salad than tomato, lettuce and cucumbers. Most salads can absolutely be a main dish, particularly if they contain a protein element.
