Under Pressure Pulled Pork Sandwich

Time: 15 minutes

Time: 40 – 50 minutes
Total
Time: 55 – 65 minutes
Yield: 15 – 20 sliders, 10 full-sized sandwiches
Ingredients:
3 pounds pork butt, cut in quarters
1 (12-ounce) bottle beer
3 cups Ketchup
Juice and zest of 3 oranges
6 cloves garlic, finely chopped
2 large red onions, peeled and sliced
½ cup brown sugar
2 tablespoon prepared mustard (like Dijon)
2 tablespoons onion powder
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
1 tablespoon smoked paprika
1 tablespoon Chinese five spice powder
1 tablespoon ground cumin
1 tablespoon kosher salt
1 tablespoon freshly ground pepper
1 teaspoon chili powder
Brioche buns for sandwiches
Spicy Fennel Slaw, recipe to follow
Directions:
In a medium bowl mix together all ingredients
except pork butt. Place pork in pressure
cooker and pour sauce ingredients over.
Bring to full pressure, reduce to medium, and cook for 40 – 50 minutes. While the pork is cooking, prepare the fennel
slaw and candied jalapeno peppers.
When the pork is cooked, remove from the
pot and reserve on a plate until cool enough to handle. When cooled, shred the
meat with your hands or using two forks. Strain the BBQ sauce through a fine
mesh strainer and place back in the pot over medium high heat. Let the liquid reduce by half, pour over
shredded pork and reserve for assembly.
To
serve, pile up the delicious pulled pork on brioche buns topped with fennel slaw you’ll get a
perfect bite of beer and BBQ with every bite.
Touchdown!
Rad Tip:
If you do not have a pressure cooker use a slow cooker. Put all
ingredients in a slow cooker, and cook on high for 5 hours.
