s'mores around a campfire with friends and family in the summer! Looking for a
gourmet twist on this classic snack? Check out Fiasco Gelato's s'more
recipe, which hinges on their homemade vanilla bean marshmallows. Try it out
this weekend and you'll be sure to have everyone asking for s'more!
The S'mores
What you'll need:
- Homemade vanilla bean marshmallows (see recipe below)
- Bittersweet chocolate
- Smoked sea salt
- Graham crackers
The recipe:
Toast homemade vanilla bean marshmallows until they're brown and crispy. Top with flakes of bittersweet chocolate. Add a pinch of smoked sea salt. Sandwich between two graham crackers. Eat and enjoy!

The Homemade Vanilla Bean Marshmallows
- 3 envelopes of unflavoured gelatin
- 1/2 cup of cold water
- 2 cups of cane sugar
- 2/3 cup of local, unprocessed High River honey
- 1/4 cup of corn syrup
- 1/4 cup of hot water
- 1/4 teaspoon of salt
- 1 tablespoon of Madagascar bourbon vanilla bean paste
The recipe:
Add the gelatin and cold water to a mixing bowl and let it sit for 10 minutes. Put the sugar, corn syrup, and hot water in a large pot. Place it on the stove, slowly increasing the temperature until it reaches a boil. Let it boil for one minute. Remove pot from heat and pour the mixture into the bowl containing the gelatin and water. Add the honey, vanilla bean paste, and salt. Using a mixer on its lowest setting, begin combining all the ingredients. Increase the mixer's speed slowly and mix for 12 minutes. Pour contents evenly onto greased pan and chill overnight. Once it has set, remove from the pan and coat in icing sugar. Cut it into desired sizes and enjoy! (Your homemade marshmallows will stay fresh for approximately three weeks).
