Fall is here and what a perfect time for grilling in Orlando! Chef Marc Kusche from Hamilton’s Kitchen at the Alfond Inn has a great recipe for a grilled chicken marinade and a delicious side dish to spice things up: jalapeno-honey glazed sweet potatoes. You can see Chef Marc Kusche at the Orlando Home Show this Sunday, October 26 at 12:30 pm on the Edible Orlando Cooking Stage.


What you'll need for Marc's Grilled Chicken Marinade:
  • 3/4 cup of roasted garlic
  • 1/2 cup of white wine vinegar
  • 1/2 cup blended olive oil
  • 2 tbs dried Italian seasoning
  • 2 tbs chopped rosemary
  • 1 tsp red pepper flakes
  • 1 tbs Kosher salt
  • 1 tsp fresh black pepper
  • 1 tbs sugar
  • 1 lemon, thinly sliced (for garnish)
  • 4 chickens (to marinate)
Directions:

Combine all ingredients (excluding the chicken) in a bowl and mix well to create the marinade. Place the chicken in a large container and pour the marinade over the top. Cover with plastic wrap and leave it in the refrigerator for at least eight hours, or overnight. 

Remove the chicken from the marinade (but don't wipe the herbs off, they're delicious charred right on the skin). Season lightly with salt and pepper.

Place the chickens skin side down and grill them on high, making sure all the herb flavors are getting into the skin. Move the chicken onto a pan and cook in the oven at 350 degrees for approximately 15 - 22 minutes.


What you'll need for the Jalapeno-Honey Glazed Sweet Potatoes:
  • 2 lbs of sweet potato
  • 1 jalapeno, finely diced
  • 1/2 cup of Lake Meadows Farm Honey
  • Salt and pepper to season
Directions:

Cut the sweet potatoes in half and place them on an olive oil sprayed sheet tray, skin side up. Roast the potatoes in the oven at 350 degrees for approximately 30 - 40 minutes, then let them cool. When cool, dice into medium sized cubes and deep fry until golden brown. Transfer the potatoes into a sauté pan. Add diced jalapenos to the pan and drizzle honey over everything. Sauté for 1 -2 minutes. Season with salt and pepper. Serve with chopped chives.

We know you’re probably not hosting a haunted dinner party, but most get-togethers do require some snacks for munching. Lobster Fennel Salad

Chilled lobster salad with fennel, sweet peppers and cilantro served over arugula with cherry tomatoes and drizzled with the juice of fresh-from-the-tree Florida oranges. Oh yum!

For salad
About 2 pound lobster meat (from 3 1 1/2 pound live lobsters)
2 ripe avocados, small diced
1 head fennel, shaved thin
zest of one orange
2 oranges, segmented, juiced saved
1 small red onion, sliced thin
4 small sweet peppers, sliced thin

For dressing
5 tablespoons fresh cilantro, minced fine
Reserved juice from citrus
2 tablespoons honey
1 tablespoon chili oil 
½ tablespoon fresh ginger, minced fine
1/4 cup extra virgin olive oil
Fresh ground sea salt and black pepper to taste
1 bunch baby arugula
14 cherry tomatoes, halved

If you are cooking your lobster
Steam or boil the two lobsters with the tails tied together (belly to belly) to ensure that they stay straight. They usually cook perfectly in 8 minutes. After they are cooked, shock them in ice water. Once cooled, remove the tail meat and slice each tail widthwise into eight thin pieces. Carefully remove the claw meat to retain its shape. Remove knuckle meat and dice.

Make the dressing
Wisk ingredients together

Assemble the salad
Toss salad components with enough of the dressing to coat well but not soak the salad. Season with salt and pepper to taste.

Have you ever wondered what happens to the food you donate to your local food bank? What happens when the food is given to a family in need and then taken home and prepared for a meal?

You will get an inside look with a special event at the Indianapolis Home Show — the Choppin’ Hunger Challenge! It’s Saturday, Feb. 1 at 11 a.m. on the Unilock Outdoor Living Stage in the West Pavilion at the Home Show.
 
One out of every six children in Indiana is at risk of hunger. How can you help Hoosier families get a nutritious and filling meal? Donate to your local food bank. Also, make sure you are giving the right type of food.

Participate in the Choppin’ Hunger Challenge at the Indianapolis Home Show presented by Xfinity! Join local chefs as they battle to win the challenge of creating a gourmet meal from typical food pantry items.

Indianapolis Colts Team Chef DeWitt Jackson is one of the local chefs. After graduating from Second Helpings Culinary training program, Jackson worked at the Adam’s Mark Hotel until a call came from the Indianapolis Colts team to come on board as chef for the NFL-winning franchise. Also participating in the Challenge is Indiana Pacers Team Chef David Harvie. Harvie studied with his dad, an executive chef trained at Le Cordon Bleu in France. Prior to his position with the Pacers, Harvie worked as a successful chef with Levy Restaurants at Jacksonville Municipal Stadium and other venues in the sports and entertainment industry.

Home Show attendees are encouraged to vote on their favorite meal, and get the chance to learn about the most desired foods needed by Hoosier families. Then, make a donation!

Donations of cooking spices are encouraged to spice up the offerings for Gleaners Food Bank’s agencies, serving more than 320,000 food insecure Hoosiers annually.

This exciting new program was created by the American Dairy of Indiana, Gleaners Food Bank, Second Helpings and CICOA — all working to eliminate hunger in Indiana.

It's Wellness Wednesday!  With summer approaching, it's time to start thinking about fresh summer salads.  At my house, we make a salad with every meal, but I often forget that there's more to salad than tomato, lettuce and cucumbers. Most salads can absolutely be a main dish, particularly if they contain a protein element.

It's fall, it's Friday and for Canadians, it's thanksgiving this weekend (mmmm, turkey). In July Home and Garden Events asked Facebook fans to “like” a picture of sweet potato fries if they were fans of the amazing side dish. Over 100 people “liked” the picture; to me this ultimately showed a love and commitment to the sweet potato.

Sweet potatoes do have their health advantages:

- They are high in vitamin B6 & vitamin C

- They contain iron.

- They are a good source of magnesium (the ANTI-STRESS mineral)

- They are a good source of potassium

- Their rich orange colour indicates that they are high in carotenoids like beta carotene (good for anti-aging)
